Zona di produzione: Vineyard “Casa Padrone”, Municipality of Castana.

Vitigni: Barbera, Croatina, Uva Rara and Vespolina.

  • Acreage*: 1.2 acres

  • Harvesting*: In the first decade of October, the grapes are harvested in the cool hours of the day, collected in 20 kg boxes and pressed immediately.

Cultivation system: Vine density of 4000 plants per acre with newly inserted canopies. Permanent natural grass and modest fertilisation, mostly organic.

Production parameters:
Maximum grape production (yield): 80 hl/ha
Low rate of leaves blossoming.
Low production rate per plant.
Selective pruning and harvesting of the grapes. 
Autochthonous yeasts.
Skin-contact maceration.
Temperature-controlled fermentation in large barrels.
Long maceration with marc.
Ageing of 12 months in 12.5hl barrels and 12 more months in stainless steel barrels

Combinations: Especially good with meat dishes and game.
